Orange Cake

Delicious and perfect orange flavored cake, it’s beautiful, moist and fluffy.

INGREDIENTS

1 3/4 cup all purpose flour
2 tsp baking powder
1/4 cup butter (room temperature)
1 1/4 cup powdered sugar
1/4 cup oil
3 eggs
1/2 cup milk
1/2 cup of orange juice
1 tbsp orange zest
1 tsp vanilla essence

INSTRUCTIONS

Preheat oven to 180C. Grease or line the pan with parchment paper and keep aside.
Sieve the flour, baking powder and keep aside.
In a bowl, add butter, oil, sugar, and beat well.
Now add the eggs one at a time, beat the mixture well after adding each egg.
Add the milk, then add the orange juice, orange zest and vanilla essence and whisk.
Add the dry ingredients and mix gently until its smooth.
Pour the batter in the baking pan.
Bake it for around 45 minutes or until its golden.
Check the cake by inserting a toothpick in the middle of the cake, it should comes out clean.

Remove the cake on to the cooling rack to cool completely before serving

M & M Cookies

Rich, sweet and colourful cookies, these are incredible & makes you feel like a kid again. They are big, chunky and absolutely delicious!!

Who can resist these freshly baked homemade cookies?

INGREDIENTS

300gms All purpose flour / Maida
125gm Butter at room temperature
100gm Brown sugar
70gms Powdered sugar
11/2 tsp Baking powder
1/2 tsp  Baking Soda
1 Egg room temperature
1 tsp Vanilla essence
200 – 250gms  M & M chocolate/ chocolate chips

INSTRUCTIONS

In a bowl, add in the flour, baking powder, baking soda and keep aside.
Beat butter, brown sugar and powdered sugar in a bowl until creamy.
Add in the egg and vanilla essence and beat it well.
Add in the flour mix and beat until the dough binds together.
Now add in the M & M ( few crushed) and mix in until they are distributed well in the cookie dough. Keep few M & M’s aside to put it over the cookie.
Scoop out small balls of cookie dough, weighing about 30gms onto the lined baking trays, push the whole M & M over the cookie balls and keep the tray in the refrigerator for at least 45 minutes to 1 hr .
Preheat the oven to 180C° .
Take the cookie tray out of the refrigerator and flatten the cookie balls with your fingers.
Bake the cookies for 15 to 17 minutes or golden brown.
Once they are done , leave them to cool on the rack for at least 30 minutes.

Cinnamon Twist Star Bread

A sweet bread with the goodness of cinnamon and sugar.Christmas excitment is setting in and I cant help myself but bake this beautiful soft & fluffy pull apart bread.

Ingredients

2 1/4 All purpose flour
3 tbsp pwd sugar
2 tsp active dry yeast
3/4 cup milk
1/4 cup butter, at room temp ( if using unsalted butter , add 1tsp salt)
1 egg
1 tbsp  olive oil for greasing
For egg wash: 1 egg mixed with 1.5 tbsp milk
For filling : 3 tbsp unsalted butter ( 1tbsp for each layer). mix 2 tsp cinnamom powder and 4 tbsp powdered sugar
Dusting: 2 tbsp pwd sugar


Instructions


Line the baking tray with a parachment paper.
Place the yeast and sugar in a mixing bowl. Heat the milk until warm.( you should be able to put your last finger in at ease )  Pour warm milk into the  yeast & sugar mix.. Stir in well and cover it. let it sit for 10 mins till it gets frothy.
Now add in butter, egg, flour.and mix in well. Add the yeast mixture.Using your hand mix the flour lightly knead  it into a ball
Grease the bowl, place the dough in it and place a cloth or a cling wrap over it . Keep it in a warm place for an hour or till it doubles in size.
Punch the dough so the air is released.Divide into 4 equal pieces . Dust the surface and roll each out into a circle. Place it in a baking sheet. Dust it with butter and sprinkle in the cinnamon and sugar filling, then layer the remaining circles and filling The last will not have filling on top of it. Keep a glass or bowl in the centre, cut strips from the glass to the edge (cut 16 even strips, leaving few gaps) now grab two strips and twist them twice, then press the two ends together.
Now cover it once again and  let it rest for 20 -30 mins
Preheat oven to 180°C
Brush the star bread with egg wash and bake for  25- 30 minutes or until golden brown. Once out dust powdered sugar over it.

Cranberry and Pistachio Biscotti

Crispy and crunchy biscotti with nutty and fruity flavour

Ingredients

1 cup all purpose flour
1/2 teaspoon baking powder
1 egg
1/3 cup powdered sugar
1 pinch salt
1/2 cup pistachios
1/4 cup dried cranberries
1/8 tsp vanilla essence
1/2 tsp zest of orange or sweet lime 

INSTRUCTIONS
In a bowl mix flour and baking powder and sieve. In another bowl, beat the egg lightly. Then add in sugar and salt.
Beat until the mixture is fluffy. Add in vanilla essence and mix.
Add in zest, flour and baking powder mix, until well combined.
Then add pistachios and cranberries. Mix until it form a dough. Dust your hands and counter top, Now transfer the dough to a floured surface. Divide the dough into two equal portions, roll into a flat log shape. Place this in a baking tray lined with parchment paper.
Bake at 160°C for 30 minutes on the lower tray till its firm. Remove from the oven and let it cool for about 5 minutes.
Now use serrated knife to cut it diagonally into thin slices.
Arrange these in lined baking tray and bake it for150°C for 12 minutes (6 minutes for each side) or until slightly golden brown.
Cool it completely and store it in a airtight container.

Red Velvet Swirl Brownie

Perfect rich and fudgy red velvet brownie swirled with cream cheese…
What can be more delicious than a combination of red velvet and cheesecake!

Ingredients

For Red Velvet Layer:

1/2 cup unsalted butter
2 eggs
3/4 cup all-purpose flour
1 cup powdered sugar
1 tsp vanilla essence
1/4 cup cocoa powder
1 tablespoon red food coloring
Pinch salt
1 tsp vinegar
1/4 cup chopped toasted walnuts

For Cream cheese Layer

225 gms cream cheese, room temperature
1/4 cup powdered sugar
1 egg
1/8 teaspoon vanilla essence

Instructions

Preheat the oven to 180° C
Line the baking tray with parchment paper (8 by 8-inch baking tin)

Brownie layer:
In a large bowl add melted butter, then add the sugar, vanilla, coco powder, salt, food color and vinegar, one by one, mixing at each addition. In a separate bowl, whisk the eggs and stir it in the mixture. Add the chopped walnuts in the flour and then fold in the flour in the coco mixture. Pour the batter into the prepared baking tin, keep 1/4 cup of the batter for the top.

Cream cheese layer:
Blend together the cream cheese, sugar, egg and vanilla essense in a bowl. Gently spread the cream cheese layer on top of the brownie batter. Add few dollops of the brownie batter over the cream cheese layer. Using a toothpick or a knife, drag the tip through mixture to create a swirl pattern. Bake the brownies for 25 to 30 minutes. Remove and allow it to cool completely before cutting.
