Prawn Roast

A spicy, aromatic kerala style prawn roast. Delicious and flavorful dish.

Ingredients

2.5 tbsp Coconut Oil
2 Onion, chopped/ sliced
1 tbsp Ginger- Garlic paste
1 chillies chopped
1 sprig Curry leaves-
1 Tomatoes ( optional)
1/2 tsp mustard seeds
1 tsp cumin seeds
1 tsp fennel seeds
1 tsp chili powder
1.5 tsp coriander pwd
1 tsp garam masala pwd
1/2 tsp black pepper pwd
Salt to taste
Coriander leaves- Garnish

Marination for prawns
250 to 300 gms Prawns
1/2 tsp Turmeric powder
1 tsp Salt

Instructions
Marinate the Prawns and keep aside.
In a pan heat oil over medium heat, add cumin, fennel seeds, saute. Add onions, saute for a few minutes.
Add ginger-garlic paste, chilli and curry leaves  saute till onions turn golden brown.
Add tomatoes, if you prefer at time. Let it cook till the tomatoes are soft.
Add the marinated prawns.,mix in well. Now add  chilli pwd, coriander pwd and salt to taste as per required.Cover and cook for a while. You can add around 3 tbsp water and cook till the water dries up.
Add ground pepper and garam masala and combine well.
Add chopped corianderl eaves and serve hot.

Chicken Pakora

Beautifully fried chicken pakoras.Its crispy and flavorful. Excellent appetizer for any party or on a relaxing evening.

Instructions

Marination
300 gms boneless chicken thigh
1 to 1 1/2 tbsp ginger-garlic paste
2 chilles finely chopped
1 tsp chillies flakes
1 tsp dry fenugreek leaves crushed
1/2 tsp red chilli flakes
1/2 tsp cumin powder
1/2 tsp coriander powder
1/2 tsp pepper powder
3 to 4 tbsp chopped coriander
Salt to taste

Cut the chicken into thin slices. Marinate the chicken with the above ingredients for an hour.

For frying

About 50 – 60 gms Gramflour
1tbsp Cornflour
1 tsp Baking soda
Water to make a thick paste
Oil for deep frying

Instructions

Mix gramflour, cornflour and baking soda to the chicken mix.Add water little by little to make a batter and the chicken should be well coated. Add salt if needed.

Heat oil. Add the chicken one by one and fry till golden brown. Serve hot.

Pepper Chicken

Hot and spicy, finger-licking Pepper chicken

Ingredients

5 to 6 chicken drumsticks
1 onion sliced
1 tomato chopped
2 to 3 sprigs of curry leaves
1 tsp Pepper powder
1 chilli slit
2 tbsp coconut oil
Salt to taste
1/2 cup water

For the masala – grind into fine paste
1/2 tsp cumin seeds
1.5 tsp peppercorn
1/2 tsp tumeric powder
1 tsp coriander powder
1 large onion sliced
2 dry red chillies
8 garlic flakes
1/2 inch ginger

Instructions

Clean and slit the chicken legs, apply salt and keep aside.

Saute onion, once golden in colour , add the chopped tomato and 1 sprig curry leaves,  fry well. Now add the ground paste. Fry the masala till you see oil at the side of the pan and also rhe colour of the mixture will get darker.
Now add the chicken legs and mix till the legs are well coated with the masala.
Add 1/2 cup water , add salt to taste, now cover and cook  till the chicken is done and the water is dried up..you can slowly keep adding water if required
Now add the chilli and the remaining curry leaves and pepper powder. Give it a good mix and cook it for 2 to 3 mins. Serve hot!!

Beef Roulade

Delicious beef roulade wrapped in goa sausages and veggies, absolutely scrumptious and flavorful.

Ingredients
1 kg Beef undercut slices
1 onion1 tomato 
2 tbsp of ginger garlic paste
Juice of 1/2 Lime / 1tbsp vinegar
1 – 2 Maggie cube ( optional but recommended) 

For beef filling
Goa sausages
Potato strips
Onion sliced
Carrot strips
Capsicum strips 

Green masala 
1 cup Coriander leaves
1 onion
12 -15 cloves
1 1/2 inch ginger
8-10 garlic cloves
7 -8 green chillies
1 inch cinnamon stick
10-12 peppercorns
1 tsp cumin seeds
1 tsp Turmeric powder
Marble size tamarind ball
Salt to taste 

Instructions
Grind the green masala into a fine paste adding little water. 
Tenderize the beef, add salt and add 2 tbsp of the green masala and marinate the beef for 30 mins to 1 hr. 
Take a beef strip and place the goa sausages, 1 strip of potato, onion, capsicum, carrot and roll the beef. To secure tie it up with a thread or seal it with a toothpick. 
In a deep pan , saute onion till translucent,  add chopped tomato, ginger and garlic paste. Fry well . Now add the green masala , maggie cube and saute the masala till you see the oil at the sides, now add water. Add the beef rolls and add more water if needed. Cover and cook till the beef is done.  Garnish with coriander leaves and serve
Note: if you still have few veggies left, chop them into cubes and add it in while cooking

FEIJOADA

A popular and delicious Portuguese dish. Feijoada is derived from the word ” feijao“ , in Portuguese for “beans”. The basic ingredients of feijoada are beans cooked with fresh pork or beef. In Goa they use goan sausages to make this preparation.
Feijoada is also the national dish in Brazil cooked with black beans along with variety of salted or smoked pork.

Ingredients
3/4 Cup Rajma/ Red beans ( soaked overnight)
35 – 40 Goan Sausages /choriso
1 large onion finely chopped
1 tomatoes finely chopped
6 to 7 garlic chopped 
1inch ginger chopped 
1 chilli (optional)
1/2 tsp turmeric powder
1 tsp chili powder
2 tbsp oil
Salt to taste

Instructions
Cook the beans with some salt in a pressure cooker, once done strain the water. Separate the choriso meat from the casing.
In a pan heat oil, add chopped ginger, garlic, add onions and saute till translucent Add tomatoes,  cook till its soft.
Add turmeric and chilli powder,  mix well.
Add the meat and mix it over high flame, reduce the heat and add the cooked beans, salt to taste and chilli.
Add about 1 cup of water. Cover and cook till done. Serve hot

Kheema Pav

INGREDIENTS

500 gms chicken mince
2 onions finely chopped
2 medium tomatoes finely chopped
11/2 tbsp ginger& garlic paste
1 tsp cumin powder
11/2 tbsp coriander powder
12 peppercorns
7 -8 cloves
1 1/2 inch cinnamon
4 -5 green chillies 
2- 3 tsp red chilli powder 
3/4 cup oil
1 tsp lime juice
A bunch coriander leaves chopped
Salt to taste

INSTRUCTIONS

Wash the mince and let all the water get drained off.

Heat oil, fry cinnamon, cloves, pepper corns and green chillies, add the onions fry till nice and brown. Add the ginger and garlic pastes and saute. Now add cumin and coriander powder. Add the chopped tomatoes and fry till the oil separates.

Add the minced meat, saute well till the masala is well incorporated.
Add the red chilli powder and salt.

Once the mince is cooked, add in coriander leaves, lime juice and serve hot.

Chicken Roast

Super easy recipe for baked chicken. Its flavored with spices to make the best comforting dinner, roasts beautifully to a golden, crispy and juicy perfection! It’s perfect for weekend dinner.

INGREDIENTS

1 whole chicken with skin *
2 tsp red chilli powder *
2 tsp garlic powder *
1 1/2 tsp pepper powder *
Salt to taste *
Juice of 1 lime ( you can add more if you like) *
1 1/2 tbsp olive oil ( you can use regular oil) *
3 to 4 green chillies
10 to 12 garlic flakes
1 onion
1 potato

INSTRUCTIONS

In a bowl mix all the (*) ingredients, apply it over and inside the skin of the chicken.

Insert the chillies n garlic in between the skin of the chicken.

Marinate the chicken for 24 hrs.

Add 4 to 5 garlic cloves and squeeze in the lime in the chicken cavity. Also add in onion and potatoes (chopped).

Tie in the chicken legs together and place the chicken on the baking tray with the breast side on top.

Bake it at 180° C for almost 60 to 75 minutes.

Serve it with stir fry veggies.
